Rachel is a born and raised Minnesotan who just happens to be an adamant follower of the Paleo diet. She is passionate about taking care of her body, life and health, and hopes to help anyone else she can achieve great well-being as well. She is an absolute food enthusiast who loves anything to do with cooking, eating, searching the internet for food related fun and information, exploring new recipe ideas, supporting anything that’s local and sustainable, and generally spreading this positive foodie love wherever she goes. The Freckled Foodie is Rachel’s online creation dedicated to showcasing the best of these delicious passions, and a place for her to bring some wonderful edible inspiration to all those interested. The blog was a project that Rachel decided to take on after completing a 30-day Paleo diet challenge called Whole30. The entire experience left the blogger feeling better than ever, and she decided that it would be a great idea to share all of the various recipes, tips, and information for the challenge for other folks to benefit from as well. Rachel realized that when she started cooking more consciously, and really taking note of all the ingredients and products that she was putting in her dishes, it made the process all the more enjoyable and rewarding—and, not to mention, healthy. She now wants to share these awesome food and diet tips with others to help them achieve equally healthy and feel-good lives as well.
